なぜチーズを塩水で洗うと臭いが強くなるのか?

Salt water can influence the texture and ripening of cheese:
Texture
Salt draws moisture out of cheese, which can lead to a firm, crumbly texture. This is a characteristic of high-quality cheddar cheese.
Rind
Salt can cause the cheese to develop a thicker, harder rind.
Ripening
Salt can affect the ripening process by influencing the growth of microorganisms and the activity of enzymes. Starter bacteria are more sensitive to salt than non-starter lactic acid bacteria.
Smell
As cheeses ripen, rinds can be washed with different liquids to keep them moist. Repeated washing can cause the cheese to take on smells characteristic to the washing liquid.
